【大益「辛亥百年纪念」1911g 大饼茶 - 1 年陈】

　　2011年的这个时候，大益刚推出「辛亥百年纪念」1911g 大饼茶。当时茶友们都很纠结，这套上万元人民币的茶品，是否值得收藏呢？茶友们都议论纷纷，大家都期待着相关的开汤报告。

　　去年，浮雲等了一阵子，决定还是自己开汤好了。花了一轮功夫，终于把四饼茶拨开了，试喝了，结果也清楚了，当然是要多收藏一套完整的。

　　由于这套大益「辛亥百年纪念」1911g 大饼茶（包括：「巍峨中山（生）」、「江山美人（熟）」、「黄河青山（熟）」与「百年回甘（生）」）是浮雲在刚推出上市的时候就买下来，并详细地写下了意见。所以，浮雲认为，如果可以每年都为这套装茶作一个短评，跟踪此套茶的陈化进程，相信会是一件挺有意思的事情。

　　浮雲十分明白，如果又长篇大论地评述此套茶，有相当的部份是重复的，因此，浮雲只把各款茶品的陈化摘要，以表列的形式呈现，目的是方便茶友比较：

2012年开茶茶香 大树茶香明显、清幽、柔蜜、带青涩厚重青香 经典高端熟茶香、甜厚、没有渥堆味、优雅、细致、怡人 厚重、丰富、有质感、轻轻的木质香味、爽朗讨好 开扬、清爽、厚重、柔和、微蜜甜的青涩感、涩感略明显

2012年口感 水厚、滋润、甜润、大树茶口感明显。生津带少许微涩感。喝后轻回甘感觉自然舒适，相信陈化后口味更佳 清甜、爽朗、醇厚、圆润、艳丽。优质熟茶口感之中带轻回甘，确实「口感优雅细致，温润如玉」 浓稠、厚重、滑甜易入口。因发酵度适中，故茶汤有点像入仓生茶经适当退仓后所产生的独特茶韵，是有活力的熟茶 浓稠、水厚、有质有力、高端的大益茶配方。回甘持久生津，甜美清晰讨好。苦涩度比去年减低了，更容易接受

　　由于四款茶品只有 1 年陈期，加上以浮雲的评茶角度来看，茶味变化仍然未算十分之大，故此，四款茶品的「现饮评级」与「陈化评级」与 2011 年完全相同。由于 2011 年未有加入「性价评级」，故在 2012 年补回。

【2012年四茶意见总评】

　　经过一年的陈化，原本浮雲以为四款茶品的变化，应该不会太大。但实际品评起来，却发现「巍峨中山（生）」的汤色比去年深了，陈化的速度比估计中的快。不过，茶味还是年青的，因为那只是一年陈期的茶品，当然未能谈得上甚么老茶韵，这是需要时间来练成，要耐心。

　　令浮雲感到有趣的是「江山美人（熟）」与「黄河青山（熟）」的 2012 年茶汤，竟然比去年的茶汤略浅，这是没道理的，因为陈化下去，汤色只会越来越栗红色，不可能走回头的。因此，浮雲有理由相信这是与取样有关的，因为茶饼不是如 357g 标准饼的可以从饼面、饼中心及饼底拨出 10g 茶来冲泡。这么大饼的茶，光是随便挖个背面，已经有一大堆茶块。换句话说，2012 年投下去冲泡的，可能是较多发酵程度略低的茶块，因此才出现汤色较浅的现象。不过，这表示两款熟茶都保留了相当的生茶特色，使泡出来的茶汤颜色偏浅，暗示着日后将有一定的陈化变化，因为其发酵程度并不是如想象中般深的，有陈化空间。

　　至于「百年回甘（生）」，一喝下去，浮雲最深印象的是它的涩感比去年改善了，涩感降低了，回甘略为略强了，确实与此茶的名字相当呼应。因此，浮雲预期十年八载后，此茶将会相当有其陈化特色的。
